
Last week I posted a menu for the next two weeks. We did not have a very successful week, even though I had a list of meals posted. I was sick for most of the week. In fact, I was off of work from Friday until Thursday, minus the weekend. Tuesday was a snow day, and Wednesday was a below-zero temperature day. Ohio has below-zero temperature days a few times during the year. We are so not used to temperatures getting that cold, so we call off of school or have a delay.
On Monday, we had sausage, onions, and peppers in the pressure cooker. Hubby and I loved the dinner.
Tuesday was the remainder of the pot roast and the potato pancakes. I didn’t have much appetite, so I didn’t eat anything. (Part of my illness.)
The boys had school, but I didn’t, so Hubby took me out to lunch. He ate the remainder of his lunch for his dinner. The boys and I forged for dinner.
On Thursday night, we ate the remainder of the sauce from the sausage, onions, and peppers over pasta with applesauce and bread.
I worked on Friday but needed to lie down once I got home because the Imaginative One and I were going to go somewhere with our friends. Rather than explain the pressure cooker to Hubby, I had him cook chicken nuggets and Fries.
On Saturday, I made lasagna in my crockpot for our dinner. The recipe will be posted later this week. I used a recipe that I’ve been using for 15-plus years. Hubby and the Wee One loved the dinner.
Here’s the meal list with the ones we have crossed out.
Sausage, onions, and peppers in the pressure cooker over rice, leftover French bread- Baked potato soup and biscuits
- Split pea soup with ham and biscuits
- Pasta Fagioli with homemade bread
- Rootbeer pulled pork sandwiches, chips, and veggies
Pot roast, potato pancakes, and veggies- Breaded oven-roasted chicken tenders, mac and cheese, veggies
- Homemade hamburger helper and veggies
- You are on your own meals (2 times)
