Peach Salsa

Last month, I bought some peaches from the Peach Truck.  I had to find different ways to use up the 25 pounds of peaches.

At the end of June, we had family over for a taco bar dinner.  I had two different salsas out for the family to use.  One was the restaurant style salsa.  The other was the peach salsa.

I love fruit style salsas so I thought this salsa was delicious!  Plus it is quick and simple to put together.

Peach Salsa

Stars of the recipe:

  • 6 peaches, peeled and diced
  • 3 green onions, chopped
  • ½ c. cucumber, diced
  • ½ tsp. coriander
  • ½ c. cilantro, chopped
  • 1 jalapeno’ diced, optional
  • Juice of a lime
  • 1 tsp. Salt
  • 2 tsp. ground nutmeg

Steps:

  1. Combine all of the ingredients together in a nonreactive mixing bowl.  (Glass)
  2. Mix well.
  3. Adjust seasoning after tasting the salsa.
  4. Refrigerate until serving.
  5. Enjoy!
