My family has been upset because I have not been cooking many dinners lately. All of our meals have been on a whim or we have gone out to eat.
Since I had the long Thanksgiving weekend, I decided to make freezer crock pot kits so dinners will be easier for us.
I made a list of the recipes I wanted to make and then made a grocery list. Then I went grocery shopping. I would have shopped at Aldi’s but with the holiday shopping under way I opted to go to Kroger’s. When I do the next freezer crock pot kit prep, I’m probably going to bite the bullet and go to Aldi’s.
(My Aldi’s is located close to a mall. Traffic is crazy during this time of the year.)
Here is a photo of the freezer kits in my freezer. I put wax paper between the kits so they don’t stick to each other. I have had that problem before.
All of the recipes are from New Leaf Wellness.
Here is what I made:
- Cranberry Pork Loin
- Chicken Fajitas
- Sweet and Sour Meatballs
- Cilantro Lime Chicken
- Ham and Pinto Bean Soup
- Chicken Teriyaki
- Shredded BBQ Chicken
- Garlic Mint Pork Loin
- Honey Dijon Chicken
- Honey Bourbon Chicken
- Italian Sausage and Peppers
- Apricot BBQ Chicken Wings
For the most part, I followed her instructions for the kits. However, I used 3 pepper and onion freezer blend instead of cutting fresh peppers and onions. At a dollar a bag, it’s worth the convenience. I also used coconut aminos instead of using soy sauce in the Asian dishes.
I also have browned hamburger in the freezer. I cook it up and then put 2 cups of it in a bag. Two cups is approximately a pound of cooked meat. There is also shredded chicken in individual bags for quick meals. There is also some sausage links from Fresh Thyme in the freezer.
During the next 4 weeks, I’m going to use the freezer meals and then supplement with the other meals that I have in the freezer.
Here is the plan for the next 4 weeks.
Week 1 (November 27 – December 3)
Chicken Teriyaki with rice (Already has veggies cooked with it.)
Ham and Pinto Bean Soup with cornbread
Cilantro Lime Chicken with rice and corn
Week 2 (December 4 – December 10)
Sweet and Sour Meatballs with rice and peas
Chicken Fajitas over tortilla chips
Cranberry Pork Loin, Baked Potatoes or Roasted Potatoes, Veggies
Week 3 (December 11 – December 17)
BBQ Shredded Chicken Sandwiches (Gluten Free Bread for me), Chips or Fries, Veggies
Honey Bourbon Chicken, Rice, Veggies
Italian Sausage and Peppers over gluten free pasta
Week 4 (December 18 – December 24)
Garlic Mint Pork Loin, Baked Potatoes or Roasted Potatoes, Corn
Honey Dijon Chicken, Quinoa, Veggies
Apricot BBQ Chicken Wings, Chips or French fries, Veggies
