January 2011 meals – Plus Beef Hash (Crockpot) Recipe

Happy New Year!  May your year be blessed with happiness and good health.

Week of January 3 –

  1.  crockpot ribsmakeover mac and cheese, veggies
  2.  crockpot beef hash, veggies, and rolls
  3. potato soup with bacon and cheddar cheese, grilled cheese sandwiches, raw veggies
  4. breakfast for dinner – pancakes, bacon, eggs
  5.  tacos, Spanish rice
  6. leftovers

Week of January 10

  1.  veggie soup (in the freezer), rolls
  2.  ranch-style chicken, fluffy new potatoes, veggie
  3. spaghetti pie, mozzarella sticks, salad
  4. Waffle House waffles,  hashbrowns smothered, covered, and chunked
  5. pizza, salad, breadsticks
  6. left-overs

Week of January 17

  1.  grilled chicken, pasta Roni, veggies, rolls
  2.  chicken fajitas, Spanish rice, salad
  3. pinto beans and ham, cornbread, raw veggies
  4. sausage gravy over biscuits, egg
  5. ham, scalloped potatoes, veggies, roll
  6. left-overs

Week of January 24

  1.  chicken and parsley dumplings
  2. orange chicken over rice, fortune cookies, veggies
  3. 7-up pork chops, buttered noodles, veggies, rolls
  4. sandwich buffet, chips, raw veggies
  5. Skyline chili over spaghetti, raw veggies, cornbread
  6. left-overs

Crockpot Beef Hash

Stars of the recipe:

  • 1 lb of  cubed stewing meat
  • 5 large Russett potatoes diced
  • 1 onion finely chopped
  • 1 cup butter or margarine melted
  • 1 cup beef broth or stock
  • salt to taste
  • black pepper

Steps:

  1. Place all ingredients in a crockpot.
  2. Cover and cook on low setting for 6 to 8 hours (on high setting for 2 to 3 hours).
