I’ve been bad at meal prepping lately. Really bad.
It’s been a month since we’ve sat down to dinner during the week. We usually eat willy nilly.
This week I’m going to follow Sweet Peas and Saffron’s Instant Pot Meal Challenge for the week. Hopefully this will help us eat better.
I am still eating vegetarian and loving it. That’s been part of the problem with planning meals. The boys and my grown up boy do not want to eat vegetarian. They are meat eaters.
Lunches is another area I’m suffering in. If I don’t plan out my lunches, I’ll eat random foods which does not nourish my body.
Breakfasts:
Granola – I have homemade granola and some of my favorite granola from Second Street Market.
Smoothie – Spinach, juice, frozen fruit topped with chia seeds – YUM! (Only Monday – The rest of the week I’m testing so I cannot drink my breakfast because I will be unable to go to the restroom on a normal basis.)
Cottage Cheese with peaches – Yum!
Lunches:
Roasted veggie and black bean meal prep bowls
Simple salad with homemade dressing
Popcorn the custodian makes on a daily basis
Dinners:
Instant Pot Chicken Tuscan Stew – I’m going to make a second pot of it with lentils for me.
Instant Pot Brushetta Pasta – Add sausage on the side for the boys in my household.
Honey Seasame Chicken for the boys
Instant Pot Enchilada Quinoa
