Mom, What’s For Dinner? – Week of February 19, 2018

It’s been a while since I menu planned.  With my gallstones, food has not been appetizing.  I create a menu but then decide I don’t want to eat any of the food on the menu plan.

Last week, I had another gallstone attack after eating a piece of sausage.  It was awful.  So I decided meat was not my friend.

So I’m eating vegetarian until I have my surgery on the 2nd of March.  Perhaps I will continue with eating vegetarian after my surgery.  I’m enjoying it.

I have two menu plans.  One is mine while the other is for the meat loving men and boys of my family.

Boys and Hubby’s Menu

(Side dishes to be determined on some of the meals.)

Turkey, mac and cheese, mixed veggies (Sunday’s dinner)

Soy Sauce Pork Chops, left over mac and cheese, mixed veggies

Rotisserie Chicken

Brown Sugar Ham

Leftovers

My Menu

Lasagna stuffed bell peppers

Mushroom stroganoff over mashed potatoes

Vegetarian chili mac

 

Breakfasts – Breakfast potatoes and green smoothies

Lunches – Mixed butter sandwiches with grapefruit marmalade or egg salad wraps on lettuce with pickled red onions

Snacks – Cut up veggies and hummus, mandarin oranges, cherries
