This cake requires NO eggs and NO dairy. Say what! In order for the cake to rise, it requires a chemical reaction between the baking soda and vinegar.
I’m now obsessed with baking these cupcakes/ cake since it’s so easy to put together.
The Wee One’s 11th birthday was on June 22. Last year, he requested tie dyed cupcakes. He had seen a tie dyed cake mix at Target. So I made him tie dyed cupcakes using a cake mix. This year he asked for camouflage cupcakes. We did a test run with a cake mix. When I actually made him the cupcakes, I made the cupcakes using this recipe.
After we sang to the Wee One, my niece, the Imaginative One, and my niece’s friend ate the cupcakes. They wre impressed with how much the cupcakes look like camouflage. I used green food dye and variations of yellow, blue, and red to make the different shades of green.
Wacky Cake
Stars of the recipe:
- 1 & 1/2 c. plus 3 Tbsp. all-purpose flour
- 1 c. sugar
- 1 tsp. baking SODA
- 1/2 tsp. salt
- 1 tsp. vinegar
- 2 tsp. vanilla extract
- 5 Tbsp. vegetable oil
- 1 c. water
Steps:
- Preheat the oven to 350 degrees Fahrenheit.
- Combine the flour, sugar, baking soda, and salt in a greased 8 by 8 baking pan.
- Create three depressions in the mixture. (Two small and one larger)
- In one of the smaller ones, pour the vinegar. In the second smaller one, pour the vanilla extract.
- In the largest depression, pour the vegetable oil.
- Pour the water over the rest of the ingredients.
- Mix together.
- Bake in the oven for 35 minutes or until the center is baked through.
The Wee One wanted cupcakes instead of a cake so I adapted the recipe to make cupcakes instead of a cake.
Wacky Cupcakes
Stars of the recipe:
- 1 & 1/2 c. plus 3 Tbsp. all-purpose flour
- 1 c. sugar
- 1 tsp. baking SODA
- 1/2 tsp. salt
- 1 tsp. vinegar
- 2 tsp. vanilla extract
- 5 Tbsp. vegetable oil
- 1 c. water
Steps:
- Preheat the oven to 350 degrees Fahrenheit.
- Combine the flour, sugar, baking soda, and salt in a large mixing bowl.
- Create three depressions in the mixture. (Two small and one larger)
- In one of the smaller ones, pour the vinegar. In the second smaller one, pour the vanilla extract.
- In the largest depression, pour the vegetable oil.
- Pour the water over the rest of the ingredients.
- Mix together.
- Fill the greased cupcake cups or wrappers 2/3rds full.
- Bake for 25 minutes or until the center is baked through.
Allow to cool before icing the cakes or cupcakes. I used frosting from the store since I already had it on hand.
