Let’s make this new year a beautiful year!
Happy New Year! I hope you had a great New Year’s Eve and Day.

I did some meal prep this week, so it should be an easy cooking week.
Here are some pictures of my food prep:


#1 – Cut up celery, carrots, and onions – The celery and carrots are for snacking. The onions are for meals. I bought a huge onion, so I got many diced-up onions.
#2 – My cinnamon bun creamer for the week. I will post the recipe for the creamer later this week. It’s delicious!
#3 – Hard boiled eggs cooked in the oven.
#4 – A Mediterranean-style bean salad – I’m putting it over spinach for lunches.
#5 – Roasted potatoes
#6 – Chicken piccata
#7 – Plain Greek yogurt with frozen peach slices – I made 5 of them for lunches this week.
#8 – Veggie beef soup ready for the fridge
#9 – Granola for the Greek yogurt – Yum!
#10 – Veggie beef soup cooking away

Now onto the menu for this week:
Monday – Chicken piccata, roasted potatoes, corn
Tuesday – Veggie beef soup
Wednesday – Chicken hash made from left over chicken and potatoes
Thursday – Veggie minestrone soup (Add macaroni to the veggie beef soup.)
Friday – sausage, side dish TBD, veggies
