    Secret Recipe Club

    This is the third time I’ve participated in the Secret Recipe Club.  Each month, we are assigned a different blog.  We look check out the blog and find a recipe to make, photograph, and then share.

    This month I was assigned Morsels of Life.  CJ likes recipes that are quick and easy which is good for me.  I love quick and easy recipes also.

    Top 5 Recipes that Interested Me 

    1. Whipped Garlic Butter – I’ve always wanted to make whipped butter.  Adding the garlic to the whipped butter would be a plus for Hubby.  He loves anything garlic.
    2. Pecan Chia Pudding – I’ve been intrigued with chia seed pudding.  This recipe sounds like a healthier version of pecan pie.  Yum!
    3. Sweet and Tangy Cucumber Salad – I love cucumber salads; however, most of them have raw onions in it.  This one does not have raw onions in it.  It would be good as a side dish to an Asian dish.  (I have a sensitivity to raw onions.)
    4. Roasted Broccoli – Roasted veggies are so delicious!  Enough said.
    5. Spanish Okra –  Hubby loves okra in veggie soup.  He would also like it prepared this way.  (Hubby’s mom is from Charleston, SC, so he swears he is part southern.  Okra is one of those southern foods he loves.)

    What I decided to make from her blog

    I finally decided on making a quick and easy Catalina dressing.  Later this month, we are hosting a family dinner.  One of our guests is vegan, so I’ve decided on a taco salad bar for the family.  I’m going to make taco meat with ground beef and a sweet potato and corn topping for the taco bar. We are also going to have a vegan salad dressing and Catalina dressing for the taco salad.

    Catalina Dressing

    • Servings: 4-6
    • Prep Time: 5 mins
    • Cook Time: 10 mins
    • Difficulty: easy

    Ingredients

    • 1/2 c. Extra virgin olive oil
    • 1/2 c. ketchup
    • 1/4 c. sugar
    • 3/4 c. white vinegar
    • 1 tsp. garlic salt or powder
    • 1 Tbsp. Worcestershire sauce
    • 1/2 Tbsp. onion powder

    Directions

    1. Combine all ingredients in a blender cup or mason jar.
    2. Cover and shake until combined.
    3. Enjoy on your favorite lettuce salad!

    When I was younger, my mom would make this dessert / snack.  She would take the finger jello to church or even to Rainbow receptions.  When I eat finger jello, I’m reminded of my youth.

  • Snickerdoodle Waffles

    It was a lazy Saturday.  The boys had gone from place to place the day before so I told them they could sleep in.  The first one up was the Imaginative One.  So I asked him what he wanted for breakfast – waffles or pancakes.  He decided waffles sounded delicious.

  • Meaty Spaghetti Sauce (Wee One’s Sauce)

    The other day I had to change our menu because we changed our plans for the week.  I had gone through our pantry and noticed we had a lot of spaghetti noodles.  So instead of barbecue chicken legs, I decided to have spaghetti.

  • Orange Chicken

    This post was originally posted in February 2011.  There was no photograph of the dish so I remedied that when we ate the meal last night.

    The Wee One decided to help me make the dish.  I’m so happy that he is willing to help with the cooking of dinner.  I helped him with getting the popcorn chicken out of the oven and the temperature and time on the oven.  He helped with the majority of the rest of the dinner.  The Wee One was so proud of himself once the dinner was finished cooking.  He wanted everyone to try his rice.

  • Mom, What’s For Dinner? – June 2016

    Welcome to my menu:

    I’m going to do something different this month.  I’ve planned a menu for the rest of the month so we can concentrate on our summer fun instead of trying to decide what to do with dinner.

  • Quick Strawberry Lemonade

    My boys and I love a tall glass of lemonade.  My favorite lemonades are from Chick-Fil-A and Wendy’s.  When I order a lemonade from my Wendy’s I usually order the strawberry lemonade.  This is at home version of the strawberry lemonade from Wendy’s. (more…)

  • Simple Peach Crisp – Foodie Extravaganza

    I’ve been loving peaches lately.  When I had to decide on a midsummer treat, I thought peach crisp would be a great treat especially with homemade whipped cream.

  • Pretzel Rolls

    My family loves pretzel rolls.  Actually they like anything pretzel related – hard or soft.  These rolls take extra work but are worth the happiness from your family when you finish this delicious treat.

    You could serve them as a carb at your dinner table or you could use the rolls to make a delicious sandwich.  Some ideas for a sandwich are a lunch meat sandwich, hamburgers, sloppy Joes, or pulled pork.
