    Have you ever walked around the mall and smelled the delicious smells of roasted pecans or almonds?  Or walked around Walt Disney World and saw the carts of candied nuts?  You can now make candied pecans and pretend to be in WDW.

    I made these many years ago as part of my Christmas-making and baking.  However, I stopped making them because of family circumstances.  Today I made them once again.  Yum!  My house now smells wonderful!

  • Eggnog Creamer

    If I could describe this creamer, I would say yum!

    I made a batch of this on Monday evening.  The next morning, my coffee maker decided not to work.  :(  Finally, my husband was able to get it to work on Wednesday afternoon.  We don’t know why it stopped working and why it began to work once again.  Crazy.

    Wednesday evening, I had a cup of coffee with this creamer.  It was even better than on Monday.

    This is the last week of school before our two-week break.  The students are restless.  The teachers are restless.  It’s been exhausting trying to keep the students focused on their work.

  • Gingerbread Coffee Creamer

    It costs $4.25 for a tall (small) Starbucks’ gingerbread latte.  You can make this creamer for half that price.  You’ll get the same great flavors found in gingerbread.

    Molasses, cloves, nutmeg, cinnamon, and ginger are flavors you associate with gingerbread.  So those are the flavors I put into my homemade creamer.

  • Meatloaf Muffins with Meatloaf Glaze

    Meatloaf Muffins

    Stars of the recipe:

    • 1 lb. of ground beef
    • ¼ c. rolled oats
    • 1 egg
    • ¼ c. diced onion or minced dried onion
    • spices – salt, pepper

    Steps:

    1. Preheat oven to 425 degrees Fahrenheit.
    2. Place ground beef in a mixing bowl.  Add the remaining ingredients to the ground beef.
    3. Mix to incorporate all ingredients, but don’t mix too much.
    4. Form into muffins. (about ¼ c. to ½ c.)
    5. Place the meatloaf muffins into a muffin tin sprayed with cooking spray.
    6. Top each muffin with meatloaf glaze (recipe below).
    7. Bake in the oven for 20 minutes or until completely cooked through.  (Internal temp of 155 to 160 degrees Fahrenheit.)
    8. Enjoy your favorite side dish!

    Meatloaf Glaze

    Stars of the recipe:

    • ¼ c. ketchup
    • 2 Tbsp. Dijon mustard
    • 2 Tbsp. brown sugar

    Steps:

    1. Combine the ingredients together.
    2. Use to top your meatloaf or meatloaf muffins.

  • Menu Plan Monday – Week of December 7, 2015

    For the first few days of December, we’ve had fog.  Some days it was a little fog, like on Wednesday, when it was only within a mile of the school where I teach.  We had frozen fog on Friday night/ Saturday morning and Saturday night/ Sunday morning.  I went out and took some photos of the frozen fog.  One of the pictures is a new favorite of mine.  I love the cardinals.  To get a great picture of a mama cardinal is cool.

  • Lumps of Coal – Christmas Making and Baking

    This recipe made its rounds on Facebook last December.  When I made it last year, the boys absolutely loved it.

    Today I made a batch, and the Wee One told me it was as good as last year.  Score!

    Stars of the recipe:

    • 1 package of Oreos (or 36 Oreos), crushed
    • 5 c. mini marshmallows
    • 4 Tbsp. butter

    Steps:

    1. Crush Oreos and then place them in a big bowl.
    2. Meanwhile, melt butter and marshmallows in a big pot.
    3. Add the crushed Oreos.
    4. Mix the Oreos and melted butter, and marshmallow mixture until combined.
    5. Place the mixture in an 8 by 8 pan sprayed with cooking spray.  (I sprayed cooking spray on my clean hand before pressing the mixture down.  You can also use a spoon sprayed down with cooking spray.)
    6. Allow the mixture to set for 1/2 hour before cutting it into squares.

  • Crockpot Chicken Fajitas

    Crockpot Fajitas

    Stars of the recipe:

    • 2 to 4 chicken breasts (depends on the size of the chicken breast – Mine were huge, so I used only 2.)
    • 1 green pepper, sliced
    • 1 yellow, red, or orange pepper, sliced
    • 1 small onion, cut into rings
    • ¼ c. water
    • 2 Tbsp. homemade taco seasoning or storebought fajita seasoning packet

    Steps:

    1. Place chicken breasts in a 4 quart crockpot.
    2. Place peppers and onions over the chicken.
    3. Sprinkle the taco seasoning or fajita seasoning over the chicken and veggies.
    4. Pour water over the chicken and veggies.
    5. Cook on low for 6 to 8 hours or high for 3 to 4 hours.  
    6. Using 2 forks, shred the chicken.
    7. Serve on a tortilla with cheese and sour cream.

  • Menu Plan Monday – Week of November 30, 2015

    I’m back at work after a week off.  So it’s back to the daily grind.

    On Saturday, I asked the boys what they wanted to have for dinner.  The Imaginative One asked for brown sugar ham, and the Wee One asked for chicken noodle soup.  Actually, he asked for chicken nugget soup.  At least that was the joke on Saturday.  The Wee One loves chicken noodle soup.

    Anyway, onto the menu,

    Monday – Brown sugar ham & leftover Thanksgiving side dishes

    Tuesday – Leftover turkey corn soup and turkey pot pie with 7-up biscuits

    Wednesday – chicken noodle soup

    Thursday – honey dijon pork chops, rice, either corn or mixed veggies

    Friday – Homemade pizza

    A few notes:

    1. I don’t include Saturdays and Sundays because those are always up in the air what I make or what is going on.
    2. Breakfasts and lunches are left to the individuals.  We have food for both, but I don’t plan them out.
