    As I was cooking this chicken, the Wee One walked into the kitchen.  He asked me what smelled so good.  I showed him the chicken that was already cooked.  The Wee One wanted to eat the chicken right then and there.

    Once I told him dinner was ready to be eaten, he began to eat one of the pieces of chicken as he was loading up his plate.  He ended up eating two pieces of chicken.  For him, that is a big deal.  He has a small appetite.

    The Wee One kept talking about how delicious the chicken tasted.  I think that means this marinade is a keeper. (more…)

    Food Memories

    As long as I can remember, my father-in-law made roast. The next day, he would make hash from the left over roast, potatoes, onions, and carrots.  I do the same thing with our leftover roast.  However, there is some differences between my hash and his hash.

  • Hawaiian Flatbread (WDW Copycat Recipe)

    One of my favorite quick service restaurant meal at Walt Disney World is from the Polynesian’s Captain Cook’s Restaurant.  I enjoy eating the Hawaiian flatbread with a cup of Dole Whip.

    I’ve never stayed at the Polynesian.  It’s on my Walt Disney World bucket list though.  It’s a beautiful resort.

    I decided to recreate my favorite meal.  It was absolutely yum!  When I made the flatbread, I drank a Dole Whip Smoothie with it.

  • Pizza Sauce

    I originally posted this recipe back in July 2010.  I decided to repost the recipe with a couple slight changes to the recipe.

    pizza sauce

    Pizza Sauce

    Stars of the recipe:

    • 1 (6 oz.) can of tomato paste
    • 1 Tbsp. extra virgin olive oil
    • 1/4 to 1/2 c. water
    • 1 Tbsp. sugar
    • salt, to taste
    • 1 Tbsp. garlic powder
    • 1 Tbsp. dried basil
    • 1/2 Tbsp. dried parsley

    Steps:

    1. Combine all the ingredients in a microwavable bowl.  (Start with 1/4 c. of water.  Gradually add more until it’s the thickness you want.)
    2. Microwave for 3 to 4 minutes.
    3. Stir once out of the microwave.
    4. Use on your favorite pizza crust.

  • “Almond Joy” Apple Bites

    Quick and Easy

    Apple bites are quick to put together.  All you need to do is slice up the apple, spread the apple slices with a nut butter, and then top the apple slices.  Yum!  Such a healthy snack depending on what you put on top of the apple slices.

    This is my second secret recipe club post this month.  I volunteered to take over for another member of the secret recipe club was unable to post since her site was going to be down.  I was assigned to Simple and Savory.

    Anne is a holistic food coach.  She loves to cook and eat healthy foods.  I was excited to look through her blog.  Even though I don’t always eat healthy, I do love eating healthier foods.  I just wish my husband was more on board with healthier eating.

  • Brown sugar carrots

    This post was originally posted in July 2010.  I have been going through my previous posts to see which ones need to have a photograph added or the photograph updated.  This post need the picture to be updated.  When we had this side dish for dinner last night, I decided to snap a new picture of the dish.

    Brown Sugar Carrots

    Original post:

    My mom gave us various vegetable seeds last April. My hubby decided to plant some of them.  One of the vegetables was carrots.  Last night, I harvested some of the carrots.  I decided to make brown sugar carrots for dinner.

    This recipe is so simple, but the taste is superb.

    Brown Sugar Carrots

    Stars of the Recipe:

    • carrots cut into circles (about 2 cups)
    • 2 Tbsp. of butter or margarine
    • 3 Tbsp. of brown sugar (You can add more if you want it sweeter.)
    • 2 tsp. of ground cinnamon

    Steps:

    1. Cut up the carrots.  Put in a microwaveable bowl.
    2. Put the rest of the ingredients in the bowl.
    3. Place the bowl in the microwave and cook for 3 to 5 minutes.  You want them tender crisp not mushy.
    4. After they are finished, take the bowl out of the microwave and then stir the syrup up.
    5. Serve and enjoy!
