    I’ve been sick most of this Christmas season so I have not made ANY Christmas cookies.  Okay, I’ll take it back.  We made peanut butter blossoms and then we ate them.

    I decided to update my peanut butter blossom recipes using gluten free flour.

    I noticed that the dough does not stand up as well as the gluten dough so you will need to place it in the refrigerator for about 15 minutes before forming it into balls.

    Even with that little inconvenience, the cookies are absolutely delicious.

    Gluten Free Peanut Butter Blossoms

    Gluten Free Peanut Butter Blossoms

    • Servings: 3 to 4 doz.
    • Time: an hour
    • Difficulty: easy

    Ingredients

    • 48 Hershey’s Kisses
    • 1/2 cup shortening
    • 3/4 cup Creamy Peanut Butter
    • 1/3 cup granulated sugar
    • 1/3 cup packed light brown sugar
    • 1 egg
    • 2 tablespoons milk
    • 1 teaspoon vanilla extract
    • 1-1/2 cups gluten free flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • Granulated sugar

    Directions

    1.  Heat oven to 375°F. Remove wrappers from chocolates.
    2. Beat shortening and peanut butter in large bowl until well blended.
    3. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy.
    4. Add egg, milk and vanilla; beat well.
    5. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
    6. Place the dough in the fridge for about 15 minutes
    7. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
    8.  Bake 8 to 10 minutes or until lightly browned.
    9. Immediately press a chocolate into center of each cookie; cookie will crack around edges.
    10. Remove from cookie sheet to wire rack.
    11. Cool completely.
    12. Enjoy!

  • Slow Cooker Freezer Kits – An Update

    Currently there are 15 freezer slow cooker kits in my freezer. It’s so easy to pull out a kit in the evening and then drop it in the slow cooker in the morning.

    About a month ago, I put together 12 freezer slow cooker kits.  Then I shared my slow cooker freezer meal plan.

    Having those kits in the freezer has been helpful because I ended up getting sick.  It was easy to put the food in the slow cooker and then set the slow cooker to cook the food.  There was not much thinking about what we were going to eat for dinner.  Believe you me, Hubby is happy to have dinner.

  • Downtown Charleston – Day 5 Part 5

    After we were finished with the Aquarium, we decided to visit downtown Charleston.  We found out that in certain areas you can park for free.  Okay, you have only an hour to be parked there.  But not paying anything to park is great.

  • Clifton Mill’s Twinkling Lights

    Twinkle, twinkle, little star,
    How I wonder what you are.

    Wait, I’m not talking about stars in the sky.

    Today I’m going to be talking about Christmas tree lights that twinkle merrily.

    About 20 minutes from my house is a working water mill called Clifton Mill.  Each Christmas season, they decorate the mill.  People come from all over to see the lights.

  • Letchworth State Park – Visitor’s Center, Inspiration Point, and Upper Falls (Blog Post 12)

    After going to the Middle Falls, we went to the Vistor’s Center.  I finally found Hubby’s souvenir from my trip.  I found a magnetic that is a piece of wood from one of the trees in the park with the words Letchworth State Park etched into the magnetic.  So cool!

  • Trip to the ER

    All I wanted to do was sleep but I did not have a pillow.  Plus my right arm was hooked up to an IV.  My left arm was hooked up to a heart monitor that checked my blood pressure periodically.

    Last Wednesday, I woke up with a gut retching stomach ache.  The Wee One and the Imaginative One just had a stomach virus so I thought that was the reason for the stomach ache.

  • Letchworth State Park – Tea Table (Wolf Creek), Middle Falls (Blog Post 11)

    Have you ever been to a place that reminds you of a hymn that you have sung your whole life?  A hymn that was your grandpa’s favorite hymn.

    I have spoken about this hymn and how Letchworth State Park reminds me of this song.

    Today is the 14th anniversary of him leaving his physical body behind for a Heavenly body.  I miss him like crazy and wish he could have met the boys.  I always have said that he and Nick would have been best buddies.  They are so much alike.

    Back to my blog post about Letchworth.

    After hiking down and then back up the Helena Trail, we decided it was time to eat.  We went to an overlook called Tea Top.  When we got there, we got to see the White Water rafters.  One of the rafts got stuck on a rock so a lot of the people who were watching the whitewater rafting cheered when they finally got free.  The people in the raft all waved to us.

    When we got done with the Tea Top area, we headed to the Middle Falls.  That is the area that reminds me of “How Great Thou Art.”

  • December 3, 2017 – Holiday Version

    When I went through my recipes, most of my holiday recipes are NOT gluten free.  These are the only holiday recipes that are gluten free.

    I might need to remedy that issue.  I already have a peanut butter blossom recipe that I adapted to be gluten free. (more…)
