    Instead of ordering Chinese food from our local restaurant, I decided to make us homemade Chinese food.  Whenever I do, Hubby tells me it’s better than the mall’s food court Chinese food.  He loves to go get lunch there on occasion.

    It’s super easy to put together.  The flavor is phenomenal!  Hubby and the Wee One really enjoyed the dish.  In fact, in the middle of dinner, the Wee One announced dinner was “yummy.”  I’ll take that compliment.

    I found frozen ginger cubes at Walmart a few weeks ago.  Each cube is worth 1 tsp. of minced ginger.  I used the minced ginger in this dish.  It made getting dinner on the table so much easier.

    I also use the already minced garlic.  We get a huge container at Sam’s Club.  As I said, it makes getting dinner on the table quicker.

    Here’s another tip to help you with dinner:  I bought a big bag of frozen chicken tenderloins.  The frozen chicken tenderloins were cheaper than buying fresh chicken.  On the day I was going to use the chicken, I pulled out the amount of chicken needed for dinner.  I then put it into the fridge to thaw out for dinner.  Since it was not completely thawed out when I went to use it, it was so much easier to cut.

    Lime Cashew Chicken

    Lime Cashew Chicken

    adapted from Robin Miller’s Quick Fix Meals

    Stars of the recipe:

    • 2 Tbsp. cooking oil
    • 2 tsp. minced ginger
    • 2 Tbsp. minced garlic
    • 1-1/2 lbs. chicken breasts or tenderloins, cubed (about 1 to 1-1/2 inches pieces)
    • 1/2 c. Hoisin sauce
    • 1-1/2 c. chicken broth
    • 1 lime zested and juiced (I put my lime in the microwave for 10 secs. before juicing it.)
    • 1 c. salted cashew halves
    • 1/2 c. green onions

    Steps:

    1. In a medium skillet, heat the oil.
    2. Add the ginger and garlic.  Heat for 1 minute.
    3. Add the chicken.  Cook for 5 minutes or until the chicken is browned.
    4. Add the Hoisin sauce, chicken broth, lime zest, and lime juice to the chicken.
    5. Turn the heat up to high.  Allow the mixture to boil.
    6. Turn the heat to medium low.  Allow to simmer for 8 to 10 minutes or until the chicken is completely cooked.
    7. Add the cashews and green onions.
    8. Serve!
    9. Enjoy over rice!

  • Mom, What’s For Dinner? – Week of March 14, 2016

    This is another weird week for our dinners.  Monday, Tuesday, and Friday are pretty normal dinnerwise.  However, Wednesday and Thursday are going to be different.  On Wednesday, we have Lenten soup supper at church so we are eating there.  On Thursday, we have pictures at church.  I won’t have time to go home and get supper on the table before Hubby has to go to work so we are planning to go out to dinner.

  • Pressure Cooker Mashed Potatoes

    As I have said in previous blogs, there are two food items that I seem to not to be able to make in the traditional manner.  Those are hard boiled eggs and mashed potatoes.  On Thanksgiving eve, I tried to make the mashed potatoes and then had to call my mother-in-law to ask her to make the mashed potatoes.

    So on Valentine’s Day, I decided we were going to have oven fried chicken.  What goes great with the oven fried chicken?  Mashed potatoes.  I was a brave little soul and made them in the pressure cooker.  They were delicious!

  • Copycat “Blimey Limey” (Tropical Smoothie)

    My favorite smoothie from Tropical Smoothie is the Blimey Limey.  I decided to recreate it but there is a lack of recipes for copycat “Blimey Limey” recipes.  Eventually I found one recipe so I adapted the recipe a little bit by removing the sweetener.  I loved it without the sweetener.

  • Cherry-Lime Infused Water

    I love cherry limeades from Sonic.  Love, love, love them.  Actually I love almost anything cherry flavored.  Yum!

    I was craving fresh cherries the other day. However it is not cherry season so there is no fresh cherries to be found or they are super expensive.  I opted to get frozen cherries instead.  So when I was deciding what type of infused water I wanted to take to work, I decided that cherry-lime would be a good flavor.

    This year  I decided I needed to have a few more recipes for St. Patrick’s Day.  My boys LOVE marshmallow bars.  I decided using Lucky Charms or Froot Loops instead of Rice Krispies would a great alternative.

  • Mom, What’s For Dinner – Week of March 7

    This weekend, I got a cool pan to make my baked pancakes in.  Instead of the pancake being in a rectangular shape, it makes little silver dollar pancakes.  Believe me it was so much easier to get a breakfast for dinner meal on the table.  I made up the batter of the pancakes and then filled each cavity.  After filling each cavity, I then baked the pancakes in the oven.  Meanwhile, I cooked bacon and scrambled eggs.  Yum!

  • Pickled Beet Eggs

    One of my favorite ways to eat eggs is pickled beet eggs.  Yum!

    They need to sit in the brine for enough time.  If they don’t, I won’t eat them.  My grandma B. used to just pass the hard boiled eggs in the brine and then pass them off as pickled beet eggs.  Yuck!

  • A Week of Family Favorites

    Three weeks ago, I shared a week of slow cooker meals.  Today I’m going to share a week of family favorites.

    My family really enjoys 2 of the recipes.  Brown sugar ham causes the boys to run to the kitchen when it’s on the menu.  They really love that dish.  Since it’s close to Easter, ham should be going on sale.  I usually stock up on ham during the Easter season since I know the family would enjoy it.  If you do get a ham, you could put some of pieces of it in the potato soup.

    The other meal that my family really likes is the breakfast for dinner.  I don’t make a hot breakfast so this is their chance to have pancakes, waffles, or French toast.

    Hubby enjoys the other meals.  So I know with these meals, the family is going to be fed well.  They will also be happy with what I’ve served for dinner.

    So what about breakfast and lunches?  For breakfasts, I have two great resources on my blog.  You can visit 6 Easy Breakfast ideas or DIY Breakfast Edition.  If that doesn’t appeal to you, then toast and cereal are great options.

    Lunch can be left overs or sandwiches such as peanut butter and jelly or ham and cheese.

    What about dessert or a sweet treat for this week’s menu?  How about Homemade Shamrock Shake.  It’s almost St. Patrick’s Day so this is a good way to celebrate the holiday.  It’s one of the Imaginative’s One’s favorite sweet treats.  If you are looking for an alternative shamrock shake with less calories then check out Skinner Shamrock Shake.

  • Hard Boiled Eggs in the Oven

    I have a confession.  No matter what, I cannot make hard boiled eggs the conventional way.  The eggs’ yolks don’t fully cook.

    I have an egg cooker that I use at times.  However, I didn’t want to use the egg cooker when I was cooking up the eggs my sons were going to dye using Kool Aid.
