  • Morris Island Lighthouse – Day 6 Part 3

    On Tuesday afternoon, Hubby and I decided to go see the Morris Island Lighthouse.  The lighthouse is located to the east of Folly Beach.  It is dangerous to actually go on the island where the lighthouse is located.  However you can get a great view of the lighthouse from the beach on the far east side of Folly Beach.

  • My heart melted

    1. The last time my heart melted was because…

    On the first day of school last year, I was doing breakfast duty.  I met R.  She is a walking miracle with all of her health issues.

    As she sat at the table, she kept mumbling about students who were in her class.  However she did not really communicate with me.

    What I forgot to say is she is the self-contained classroom because of her health issues.  Even though she talks, she does not always communicate with adults she does not interact with on a day to day basis.

    During the past year and a half, she has grown leaps and bounds.

    I make sure I say hi to her when I see her.  I called Ariel when she was going through a Disney Princess stage.  I’ve tried to teach her my name.

    Yesterday, I asked her if she remembered my name.  She stopped the rest of her classmates and would not allow them to move.  Even though once again she could not recall my name, what she said next took my breath away.

    “You are the nicest teacher.”

    Maybe one day she will remember my name.

    Even if she never does remember my name, I will take her kind words to heart.

  • Back to Canandaigua Lake (Blog Post #14)

    After we visited with Molly’s grandpa, we decided to go to Wegman’s so we could get a picnic lunch.  Then we drove back to Canandaigua Lake for our lunch.

    It was an absolute beautiful day so the lake was filled with lots of people enjoying the water.

    When we finished eating, we walked along the shore line to Scoops for some ice cream.  Even though I have already shared photos of Scoops, I have included the photos I took of Scoops in the video.

    It was an exceptionally hot day in Rochester.  I had packed jeans which was a mistake.  The walk along the shore was exhausting because of the heat.  The ice cream was a welcome treat.

    The lake had an area where people could swim with a life guard.  There is a photo of the fence in area in the video.  I’m used to swimming pools so swimming in a lake is unusual for me.

    Oh, when you see a photo with boats just “parked” in the middle of the lake, there are sand bars.  People dock their boats there and fish, swim, or just hang out there.

    Enjoy the video!  (It’s 4 minutes long.)

    I’m enjoying making videos from my photos so expect the rest of my travel blogs to have a video rather than just photos.

    I have had my menu planned out for a while.  I just had not made a blog post with the menu for this week.

    Sunday (1/14/18) –

    Veggie beef soup (freezer)

    Monday (1/15/18) –

    Chicken Parmesan, Spaghetti or Spaghetti Squash, Green Beans

    Tuesday (1/16/18) –

    Balsamic Chicken Breast, Potatoes, Peppers, and Onions, and Cucumber Slices

    Wednesday (1/17/18) –

    Peach BBQ Pulled Pork Sandwiches (freezer), Chips

    Thursday (1/18/18)

    Unstuffed Cabbage Rolls, Rice

    Friday (1/19/18)

    Italian Sausage and Peppers (freezer) over left over spaghetti

    Saturday (1/20/18)

    Leftovers

  • Mom, What’s For Dinner? – January 8, 2018 & Pressure Cooker Steel Oats

    Last week was crazy.  I only worked twice during the week.  We had below freezing temps.  Extremely below freezing temps.  The wind chill on a couple of the days registered -20 or so below.
