The Imaginative One is now in Boy Scouts and goes on hikes. One of the hiking trips requires him to carry all of his supplies and food for the weekend. Trail mix is one of the easiest items to carry. We make our own so we can customize it to his likes.

Plus the topics of these classes are of topics the students enjoy learning about. Four of us signed up for teaching cooking. My class is about quick and easy snacks. Basically they come into my room and eat food. What a concept.

One of my favorite treats at Walt Disney World is Dole Whip. Actually it’s one of many favorite treats at Walt Disney World.
I didn’t find the exact recipe for Dole Whip but I found one that was close enough to satisfy the craving for Dole Whip. There is a place 20 minutes from my house that sells Dole Whip so when I have the real urge to have some, I’ll go there and pretend I’m at WDW.
Homemade “Dole Whip”
Stars of the recipe:
- 1 c. frozen pineapple chunks
- 1/4 c. milk, use more if needed (dairy or coconut)
- 1 – 2 Tbsp. granulated sugar
- Place all ingredients in a blender.
- Blend until smooth. If needed, add more milk (1 Tbsp. at a time).
- Enjoy right away
I have a few St. Patrick’s Day recipes on my blog.
This year I decided I needed to have a few more recipes for St. Patrick’s Day. My boys LOVE marshmallow bars. I decided using Lucky Charms or Froot Loops instead of Rice Krispies would a great alternative.
