    When I was 20 years old, I participated in the Walt Disney World College Program.  I was a quick service hostess at the Disney-MGM Studios’ Sunset Ranch Market.  While I was there I met a lot of people.  Molly and I were co-workers who spent a lot of time together during the four months we were down there.

  • Mom, What’s for dinner? – August 2016

    I can’t believe it is already August.  I go back to work on August 10 so the majority of our dinners are going to be quick and easy or cooked in the slow cooker.

    I only plan for five meals during the week so that we can have a leftover night.  I don’t have a set day for the leftover night or a set day for any of the meals.  There are few meals that have to be eaten before the other meals.  The reason for that is because I’m going to repurpose the leftovers.  I also tried to incorporate one meal that I know one or both of the boys will enjoy during the week.

    If I go off track of the meal plan, I will substitute meals from the 10 quick and easy meals blog post.  Any of those meals are liked by my family.  Plus I usually have those items in my pantry.

    Meal prep is going to essential to making sure dinner gets on the table and that I have lunches and breakfasts ready to go for those busy mornings.  On Sunday, I will have a breakfast, lunch, and snack menu for the work week.  I’m planning to have a couple of those each month not only for the readers but for me so that I have ideas for what to pack for breakfast and lunch.

  • Oven “Fried” Chicken (Gluten Free Option)

    My family loves fried chicken especially Kentucky Fried Chicken.  It’s not healthy to eat KFC though.  So when I found this recipe back in February, I was super excited.  It’s a little bit healthier because you bake the chicken instead of frying it in oil.   (more…)

    I’ve mentioned before that we were going on a quick road trip in mid July.  The Imaginative One had a camp in Kent, Ohio.  Then he was going to go to another camp in Michigan.  Hubby and I decided to drive him from one camp to the other camp.

  • Mint Chocolate Chip No Churn Ice Cream

    The Imaginative One loves the color green.  Once he was old enough to chose his own ice cream flavor, he would chose mint chocolate chip ice cream.  For five or so years, he would only eat with mint chocolate chip ice cream.  In recent years, his choice of ice cream flavors is more diverse.   • Cheddar Bay Biscuits Redone

    Some of my previous recipes either don’t have pictures or the pictures need to be updated.  This recipe needed an updated photograph.  I used an Iphone to take the picture for the blog back in March 2012.  The Iphone was new so I thought I needed to use it for all my photographs for this blog.  (I no longer have an Iphone.)

  • Creamy Hummus

    Many years ago, I would sign up for coffee hour at the church we attended at that time.  I was on a “diet” at that time to lose the baby weight that I had gained from both the Wee One and the Imaginative One.  So I decided to bring a veggie tray with the typical ranch dressing and hummus instead of cookies and cake.
