  • Welcome to Day 20 of 31 Days of Slow Cooking!

I decided to Google a writing prompt for today because I was coming up blank on what I should write.  I found a website called Massive Sway that had writing prompts for each day in October.  So I’m using today’s writing prompt.

What do you like to do on a dark and stormy day?

Last night as soon as the Wee One had soon left for his acrobatic lesson with his grandma, the dog decided he was going to jump on me.  He was breathing on me and shaking like crazy.  Why was he doing that?  It was getting ready to storm.

I was working on progress reports at that time so I finished working on them.  Then I took a bath and just relaxed.

The rest of the night was stormy.  It made for good sleeping weather.  However I kept getting interrupted by the dog walking into my room, jumping onto my bed (something he’s not suppose to do), walking around my head, and then jumping off the bed.  He did that a few times before finally settling down for the night.

It continued raining throughout today while the temperature was dropping.  I wish I wasn’t at work because it would be a good day to just relax, read a book, and cook some cookies or brownies.  On a rainy day, it’s nice to make soup in the slow cooker.

In fact, I had made taco soup last night.  We had more of the soup for dinner tonight.

What do you like to do on a dark and stormy day?

Welcome to Day 19 of 31 Days of Slow Cooking!

I’m a day behind with the Write 31.  Life has gotten a little crazy around here.  I ended up having to write an Individualized Educational Plan for one of my students.  Then I had to get ready for a meeting with my principal.  Finally I had to write detailed progress reports for each of my students.  That’s only on the work end of my life.

My mom ended up moving out on Monday.  She is within three minutes driving time from my house.  That is if the weather is nice.  I can walk there in 15 minutes.  Having her close is so much better than the previous situation.  She used to live 40 minutes from me.

So I helped her out with moving out on Monday.  Actually I used the Imaginative One’s strength to help get the tv, microwave, and other boxes out to her car.  He and I ended up walking to her apartment so he could help get some of the stuff out of the car.

Last night I took her shopping so that we could get a tv.  The one she took to her house ended up not working.  It was manufactured in 1996 so maybe it was time for a new one.  LOL!  So my life has been CRAZY for the last few days.

With the crazy came a writer’s block.  I couldn’t figure out what to write and I didn’t want to write.  Now it feels better to have some of my inspiration back.

I’m going to attempt to have the next recipe up later tonight.

How’s your last few days been?

Today’s recipe is for Chinese Pot Roast.  I have two other recipes for pot roast on I’m Hungry.  One is for my favorite pot roast and the other is for balsamic pot roast.  Both are delicious.

The soy sauce in this recipe gives the pot roast a different flavor.  Serve it with my honey ginger carrots and plain rice.

I think the beef hash would be good with this pot roast.  Maybe instead of using potatoes use the rice.

  • Welcome to Day 18 of 31 Days of Slow Cooking.

This a bittersweet dinner recipe for me.  I cooked it for the second time on the day my sister passed away.  I got the call from my mom when I was about to sit down with my family to enjoy the dinner I prepared.

I attempted to eat some of the meal but was so worked up that I could not enjoy it what so ever.

The rest of my family enjoyed the flavor of the pork.  The balsamic vinegar lends a bit of sweetness to the pork but is not overpowering.

    Balsamic Pork Roast

    Stars of the Recipe:

    • 2 lb. pork roast
    • Salt to taste
    • ½ tsp. Garlic powder
    • ⅓ c. chicken or vegetable broth
    • ⅓ c. balsamic vinegar
    • 1 Tbsp. Worcestershire sauce
    • 1 Tbsp. honey

    Steps:

    1. Season pork roast with salt and garlic powder.
    2. Place in slow cooker.
    3. In a medium bowl, mix together broth, vinegar, worcestershire sauce, and honey.
    4. Pour the mixture over the pork roast.
    5. Cook on high for 4 hours or low for 4 to 6 hours.
    6. Enjoy!

    A Memory

Nineteen years ago, I went on my last first date.  I was in my second year at Wright State and had met him the previous month in our teaching art class.  Our teacher had a sick family member so she cancelled classes three times.  We ended up in my dorm room just talking about this and that.

Fast forward to October 14, 1997, Hubby asked me out on a date.  We planned for our first date for that Friday.

After my observation at a local elementary school, we met up in downtown Dayton and ate at Spaghetti Warehouse.

Then we went over to his parents’ house before he dropped me off at my dorm room.

A year and a half later, we walked down the aisle.

    Our Day

Yesterday was a beautiful day in Ohio.  I had a hair appointment.  Afterwards we went to the Air Force Museum.  Then we went shopping at Fresh Thyme and Barnes and Nobles.  Later we had a family birthday party.

All in all, it was a great day.

Cafe’ Rio is a Mexican restaurant.  I’ve never been there before.  However, I found this recipe and decided to try it.  It is delicious as the protein for the meal or in a taco with your favorite toppings.

    • 4 to 6 chicken breasts
    • ½ c. Italian dressing
    • 1 packet of dry Ranch dressing (3 Tbsp.)

    • ½ Tbsp. minced garlic
    • ½ Tbsp. chili powder
    • ½ Tbsp. ground cumin

    Steps:

Welcome to Day 15 of 31 Days of Slow Cooking.  We are at the halfway point of the 31 days of slow cooking.

    1. The Cooking Badge
    2. Honey and Apple Pork Roast
      1. Stars of the Recipe:
      2. Steps:

    The Cooking Badge

The Imaginative One is working towards his cooking merit badge.  He’s done the camping portion of the merit badge.  Now it’s time for him to create a menu and then cook it for us.  We are having baked pancakes made with pancake mix rather than from scratch.  He’s putting together sandwiches for our lunch.  For supper, we are having chicken nuggets and French fries.  They didn’t say it had to be healthy.

I’m still helping him with the cooking because there are some basics he doesn’t know.

It’s interesting having him cook in the kitchen.

This is a great fall dish.  It’s easy to put together with great flavor.

    Honey and Apple Pork Roast

    Stars of the Recipe:

    • 3 lb. pork roast or pork tenderloin
    • 2 Granny smith apples, peeled and sliced into thin slices
    • 2 Tbsp. honey
    • 2 Tbsp. cinnamon or pumpkin spice blend

    Steps:

    1. Place apples in the bottom of the slow cooker.
    2. Make slits in the pork roast.  Insert 2 thin slices of apple in those slits.
    3. Place the pork roast in the slow cooker over the apples.
    4. Pour honey over the pork roast.
    5. Sprinkle cinnamon or pumpkin spice blend over the pork roast.
    6. Cook on low 8 hours.

  • coca-cola-ham

Welcome to Day 14 of 31 Days of Slow Cooking.

Ham is one of those meals that I can make that all the family members will run, skip, or hop to the table when I make it for dinner.

When the Imaginative One turned 13, we had this for his belated birthday dinner.  The Coca Cola helps make a delicious glaze that is unbelievable.  It’s good by itself or as a sandwich.

    Coca Cola Ham

    Stars of the recipe:

    • 4 to 5 lb. sliced ham, fully cooked
    • 1 c. (8 oz.) can of coca cola or Coke
    • ¼ c. brown sugar
    • 2 Tbsp. Dijon mustard or yellow mustard

    Steps:

    1. Place ham in the crockpot.
    2. In a small mixing bowl, combine the brown sugar and mustard.
    3. Spread the brown sugar mixture on the ham.
    4. Pour the cola around the ham.
    5. Cook on low for 6 hours.
    6. Enjoy!

Welcome to Day 13 of 31 Days of Slow Cooking!

I’ve updated my recipe for Young’s Dairy Pumpkin bread/ muffins.

    Dearest Tanya,

It’s been a month and a half since your death and since mom has lived with me.  She has found an apartment 3 minutes from my house that she’s going to move in within the next few days.  Her old car broke down so we are selling her car to someone who enjoys fixing up cars for a hobby.  She is going to get a new used car also.  So things are moving forward.

The other day when I was on dismissal duty I saw a perfect Monarch butterfly.  It flew by me and then flew up into the sky.  Was that you saying hi to me?

Do you remember when this song came out in the early 90’s?  I told you this song was about them finding true love in the elevator.  I think you believed me.  If you didn’t believe me, you at least pretended to believe me.

I always will come up with silly things to say.

Oh, a Hurricane came through Florida, Georgia, South Carolina, and North Carolina.  He’s name was Matthew.  Any who, they actually closed down Walt Disney World last Friday because the prediction was that it was going to be category 4 hurricane that could have done a lot of damage.  Fortunately it was downgraded to a category 3.  Still bad but not as bad as they thought.  My students thought the name of the Hurricane was Jesus, Tacos, Earthquake, or Michael Jackson.  Obviously they don’t pay attention to the news.

    I miss you dearly!

    Love your annoying sister,
    Traci

Welcome to Day 12 of 31 Days of Slow Cooking.

So I’ve discovered a cool trick for adding photos to my blog posts.  I’ve always been afraid of using up the limit of storage I’m allowed to have on the blog so I was very sparingly putting photos on the blog.

I can now put them on my Google Photos, right click on the photo and choose the copy the image on the menu, and then paste it into my blog post.

I did that for a few blog posts but then was tired of how I couldn’t resize the photo.  This weekend I realized I could resize the photo manually.  Sweet!  Now I can share more photos without worrying about the amount of storage I’m using.

Here is a photo of Hubby and I when we went to the Goo Goo Dolls back in early August.

This is one of those easy dump and go type recipes.  You can change up the flavor depending on which type of barbecue sauce you use for the pork chops.

    Barbecue Pork Chops

    Stars of the recipe:

    • 1 & ½ pounds of bone-in pork chops
    • 1 c. barbecue sauce
    • ½ large onion or 1 small onion, diced

    Steps:

    1. Place the pork chops in the slow cooker.
    2. Top with diced onions.
    3. Pour barbecue over pork chops.
    4. Cook on high for  3 to 4 hours or on low for 6 to 8 hours.
