Before I begin my post about the Paleo diet, I feel as I need to address the massacre in Las Vegas. Yes, it was a massacre. Hundreds of people wanted to enjoy listening to music while a gunman decided to cowardly murder them.
We need to pray for this country and for those men and women who lost their lives. Too much tragedy has struck our country and Puerto Rico in the last month or so. Hurricanes Harvey, Irma, and Maria took lives and properties. So heartbreaking.
It’s time we came together as a nation and supported each other. We are ALL of people whether we are white or black, Jew, Christian, Buddhist, Muslim, or Hindu, or male and female.
Let’s not talk about Tom Petty’s death. That truly saddens me. I almost bought Hubby tickets to go see him around my birthday. Now I wish I did.

The dictionary definition for gluten is “the tough, viscid, nitrogenous substance remaining when the flour of wheat or other grain is washed to remove the starch.” or “glue or gluey substances.” The origin of the word is glue.
So what foods is gluten found in? There is a LOT of places where gluten is found.
I found this great infographic of foods that contain gluten.
It’s found in 24 different foods. Some also say oats because they are typically grown with other gluten foods and there is possible cross contamination during processing.
I do eat gluten free oatmeal (Quaker or Bob’s Red Mill). So there might be some recipes with oatmeal during this Write 31.
So what can I eat? Here is another infographic with a list of gluten free foods.
I have gluten intolerance instead of celiacs. There are times I am not as worried about cross contamination when I’m eating out.
My biggest problem with gluten is when I eat a baked good with gluten in it. It changes my mood, gives me a headache, or makes me become fatigued.

As I stated yesterday, if you are wanting to go gluten free for weight loss, please remember you are repainting starches with starches. You are not going to necessarily going to lose weight. You might want to eat a Paleo diet. (I’ll discuss what a Paleo diet is tomorrow.)
If you suspect a gluten intolerance, keep a food diary and how the food makes you feel. I did that during my first weeks of being gluten free.
If after eliminating the gluten, you still feel those symptoms please go to a doctor. There might be something else going on.
I also suggest doing a round of Whole 30 because it eliminates all of the possible foods that could cause you health problems. The Whole 30 diet is basically a stricter version of Paleo.

Before I begin sharing my favorite gluten free recipes, I need to tell my story about why I’m gluten free.
My gluten free story
In late December 2016 through January 2017, I was suffered from headaches, irritability, and bloating. I had gained a lot of weight in recent years. I could not lose that weight. I was miserable.
All of the sudden on the last Monday of January, a light bulb went off in my head. I had been sick for 4 days straight. During those 4 days, I ate a lot of glutenous foods. So I said Hubby, “I’m thinking gluten might be the culprit.”
The next day, a Tuesday, I went cold turkey and quit eating gluten. I remember not having much in my pantry that I could eat because most of it had gluten. The first grocery bills were expensive because I was trying out new foods.
Slowly it became a routine. I was completely gluten free from late January until late May. No gluten passed through my mouth.
During the summer, I experimented a little bit and tried to eat some gluten. It was then I discovered that gluten combined with sugar will either cause me to have a migraine, cause a personality change, or will cause me to become exhausted. Since June 29, I have not had any pastry, cookie, or cake that has gluten in it.
I will occasionally eat some bread with gluten in it. I’ve had it only once or twice a month in recent months.
I don’t like how I feel when I have gluten so it’s easier to avoid it.
A Disclaimer
There has been debates on whether people should be gluten free or not. Especially when they are trying to lose weight. It’s not a weight loss plan. Let me say it again. It’s not a weight loss plan. Yes, I lost 10 pounds when I went gluten free and have kept that weight off. I lost the weight because of the bloating from the gluten that was in my gut.
To know what gluten is, I’m going to share a video I found the other day that explains what gluten is and even gives you a visual.
Is eating gluten free hard? Sometimes especially when you go out to eat.
Is eating gluten free doable? Yes, it takes some planning before you go out to make sure you are eating foods that are truly gluten free.
You do need to do some research before going gluten free.

I mentioned the Hunley when I did the book review for The Girl on Legare Street written by Karen White. I shared a few of these photo collages in that post.
You can only visit the museum where they are restoring the Hunley on the weekends. So that’s where we went on Sunday afternoon.
Have you heard about the Hunley? It was a Confederate submarine that sunk an Union ship during the Civil War. After it sunk the Union ship, it disappeared.
No one knows what caused the Hunley to sink and disappear.
After we finished visiting Lake Ontario and the lighthouse, we travel to Pittsford so I could see the Erie Canal.
So what is the Erie Canal? Back in the 1820’s, they built this canal to connect the Hudson River to Lake Erie. It was a way of moving goods from one area to another. In Ohio, where I live, there was two canals built – Miami Erie Canal and the Ohio Erie Canal. The Miami Erie Canal is in the Western part of Ohio where I live. Both of those canals connected the Lake Erie to the Ohio River.
Wednesday was Hubby’s birthday. We went out to dinner on his birthday and then celebrated with an outing on Saturday. There is a YouTube sensation named Gerry Brooks. He is a principal in Lexington, Kentucky. He talks about teaching in the most hilarious way. (more…)

We had a storm on Saturday night so it was humid when I got up on Sunday morning.
I was not able to get any sunrise photos that morning.
Since we did not do a big grocery shopping trip on Saturday evening, Hubby decided that Sunday morning would be the best time to get it done. He did not want to run into the same traffic jam like the afternoon before.
Right outside our beach house was a huge puddle. The reflection was wonderful. This is the house across from us.
Here is downtown Folly Beach on a quiet Sunday morning.The Wee One would “wake up” in the morning, remove his blanket from his bed, and then go into the living room to sleep some more.
When we were in Folly in 2009, I attended church at the Folly Beach United Methodist Church. I wanted to attend the church in 2013 but missed the service by an hour. This year I was bound and determined to attend a church service.
I was not the only tourist attending the service. There was a couple from Tennessee and a family from close to Berea, Kentucky worshipping at the church.
The congregation was welcoming. When we go back to Folly Beach, I am going to make sure I attend another service.
The one thing that stuck with me is the pastor singing “Who Am I?” by Casting Crowns before beginning his sermon. That became the theme of my early morning walks on the beach.
The church is absolutely beautiful.
After I got back to the beach house, it was time for us to eat lunch before going to see the Hunley.
The kids thought it was funny to use the glasses meant for alcoholic beverages for their lemonade. The Imaginative One picked the biggest wine glass.

After we got done at the zoo, we drove to Irondequoit, NY. I wanted to see Lake Ontario. Actually I had already seen it the year before when we drove from Niagara Falls to Toronto. We didn’t stop on that trip to take photos by the lake.
