These carrots are made using the same process as my brown sugar carrots.  However, I changed the recipe just a little bit because we were eating an Asian main dish.

The Wee One saw me preparing the carrots so he decided to help me with these carrots.  He peeled the carrots, cut the carrots into coins, and then added the butter, honey and ginger.  I placed them in the microwave for him.  He ended up eating two helpings of the carrots since he helped make it.

Honey Ginger Carrots

Stars of the recipe:

  • 1 lb. of carrots, peeled and cut into coins
  • 2 Tbsp. butter
  • 2 Tbsp. honey
  • 1 Tbsp. ginger

Steps:

  1. Peel and then cut the carrots into coins.
  2. Add the butter, honey, and ginger.
  3. Microwave for 4 to 5 minutes.  Carefully remove from the microwave.
  4. Enjoy!

    I steamed my carrots in a vegetable steamer. Then I drained the water from the lower pot, added the cooked carrots to the pot and heated them with the butter, honey and ginger. So delicious and so easy! My family enjoyed this side .
