Mom, What’s For Dinner? – May 9, 2016

I have been so slack about cooking dinner and even menu planning.  In fact, the Imaginative One asked me why I hadn’t planned dinner for the week.  It’s been low on my priorities.  Testing and end of the year school stuff has taken a lot out of me.

I have decided I need to create a menu for this week.  I’m not going to put the days of the week with the recipe.  Instead I’ll list the recipes I’m going to cook.

Menu Plan Monday – Week of April 11, 2016

It’s been a while since I’ve created a menu plan.  Our dinners have been suffering since I don’t have a specific menu plan for the week.

One week I didn’t menu plan because we were suppose to use some of the food from our freezer before we went away on our Spring Break trip.  We did use a couple things from the freezer.  The second week was when we were gone for the week.  I have two blog posts coming up with some of our eats from when we were in Canada.  Last week I was suppose to be using food from the freezer.  Yep, that didn’t happen.  We had fast food twice during the week. Last week I posted a menu for the next two weeks.  We did not have a very successful week even though I had a list of meals posted.  I was sick for most of the week.  In fact, I was off of work from Friday until Thursday, minus the weekend.  Tuesday was a snow day and Wednesday was a below zero temperature day.  Ohio has the below zero temperature days a few times during the year.  We are so not used to temperatures getting that cold so we call off of school or have a delay. Menu Plan Monday – January 11, 2016

Since I pulled out my electric pressure cooker, I have decided to make most of our dinners using the pressure cooker.

When I menu plan, I usually assign days of the week for the meals with the exception of Saturday and Sunday.  This week I’m going to list possible meals.  We are not going to get to all these meals so these meals are for the next two weeks.

  • Sausage, onions, and peppers in the pressure cooker over rice, left over French bread
  • Baked potato soup and biscuits
  • Split pea soup with ham and biscuits
  • Pasta Fagioli with homemade bread
  • Rootbeer pulled pork sandwiches, chips, and veggies
  • Pot roast, potato pancakes, and veggies
  • Breaded oven roasted chicken tenders, mac and cheese, veggies
  • Homemade hamburger helper and veggies
  • You are on your own meals (2 times)

 

We had snow on Sunday morning and are expected more tonight into tomorrow.  I’ve been sick with a weird bug so I didn’t really go outside to take photos.  The one photo is taken from my back door and the other is taken from my kitchen window.

This year has been weird since we haven’t gotten much snow.  Sunday’s snow was the second measurable snow of winter.  The first was in December.  That snow measured a few tenths of an inch.  We got 1.2 inches of snow on Sunday.  The worse problem with this snowfall was the wind.  It was 50 degrees on Saturday and the temperature quickly decreased by 40 plus degrees.

Tonight/ Tomorrow’s snow’s going to give us issues also because of the wind.  It’s suppose to be extremely windy.IMG_0658.JPGIMG_0616.JPG

Menu Plan Monday – November 9, 2015

Menu Plan Monday

The weather has changed in our area.  It’s gotten cooler so we are going to have soup three times this week.

Three of the meals are going to use bulk cooked hamburger.  Having already cooked hamburger helps with assuring we have delicious meals for dinner.

On Saturday, I found a ham on sale for $1.19 a pound.  Since it was such a good price, I bought one and cooked it in the crock pot for our Sunday night dinner.  I used part of the ham and one of the bones for our split pea soup.  Yum!  Hubby took one look at the soup and said “There is a lot of meat in here.”  He was one happy man.  We still have a lot of the ham for him to eat for lunch.

Onto the menu:

Monday – Split pea soup and homemade rolls

Tuesday – Spaghetti and cheddar bay rolls

Wednesday – Vegetable beef soup and left over cheddar bay rolls

ThursdayPulled pork sandwiches (freezer) and homemade French fries

FridaySkyline chili over left over spaghetti noodles and homemade white bread

Menu Plan Monday – November 2, 2015

Can you believe it is November already?  Thanksgiving will be here before we know it.

Countdown to ThanksgivingSpeaking of Thanksgiving, I have 9 new recipes to share between now and the third week of November. This means I’ll be posting 3 or 4 recipes a week.  All but one of the recipes have been tested and approved by my family. One of the recipes is for a turkey breast that my mother-in-law has raved about.

The majority of the recipes are for the slow cooker. Anything to make it easier for you.  A week before Thanksgiving, I’m going to give you my plan for making the foods in stages as not to do it all on Thanksgiving.

This is going to be our first year hosting Thanksgiving so that will be fun.  Last year I made the side dishes and then transported them over to my mother-in-law’s house.  We’ve already invited my mother, sister, and mother-in-law to Thanksgiving.  We have a few other people we want to invite also.

I’ll be posting my first Thanksgiving dish today on my Cooking It Slow blog.  It’s for Makes It Own Gravy Turkey Breast and Easy Gravy.

I created a printable menu but am changing the dates on a few of the meals.  We have leftover side dishes that would go better with the meatloaf then the beenie weenies.  So I’m flip flopping the meatloaf and beenie weenies.

As you can see, I’m still using the crockpot for my meals.  It’s so much easier to use the crockpot for our meals.

Monday – Crockpot Meatloaf, sweet potato casserole, stuffing, and veggies

Tuesday – Chicken fajitas, Spanish rice

WednesdayBeenies Weenies (We didn’t make them last week.)

Thursday – Sausage and cheesy hash brown casserole

Friday Barbecue Chicken Legs, pasta side dish, veggies
