Menu Plan Monday – January 25, 2016

One of my favorite recipes during the past few weeks were the sausage, onions, and peppers made in the pressure cooker.  I use sausage from Fresh Thyme which is a local grocery store.  I absolutely love that place.

Anyway I got basil and garlic pork sausage once again.  We used that flavor last time also.  I put instant rice on the menu but I may change it to pasta.  Since we used the sauce from the last time over pasta later in the week, I think I may have it over pasta this time.  Yum!

I’m also going to use frozen peppers and onions instead of cutting them up.  It should make it easier tomorrow tonight when I get home.

For Sunday supper, we had porcupine balls with orange gravy.  It’s one of my husband’s favorite meals that his mom cooks for him.  This was the first time I’ve ever made it for him and his mom.  It must have been good because they both went for seconds.  I’ll be sharing the recipe in a few weeks.

Since we had a lot of the porcupine balls left over, that is what we had for supper on Monday night.  I also made pressure cooker mac and cheese (recipe coming later).  So we had a smorgasbord of leftovers.  The Imaginative One had a leftover pancake from our breakfast out on Sunday morning.

Last week I posted a menu for the next two weeks.  We did not have a very successful week even though I had a list of meals posted.  I was sick for most of the week.  In fact, I was off of work from Friday until Thursday, minus the weekend.  Tuesday was a snow day and Wednesday was a below zero temperature day.  Ohio has the below zero temperature days a few times during the year.  We are so not used to temperatures getting that cold so we call off of school or have a delay. Menu Plan Monday – January 11, 2016

Since I pulled out my electric pressure cooker, I have decided to make most of our dinners using the pressure cooker.

When I menu plan, I usually assign days of the week for the meals with the exception of Saturday and Sunday.  This week I’m going to list possible meals.  We are not going to get to all these meals so these meals are for the next two weeks.

  • Sausage, onions, and peppers in the pressure cooker over rice, left over French bread
  • Baked potato soup and biscuits
  • Split pea soup with ham and biscuits
  • Pasta Fagioli with homemade bread
  • Rootbeer pulled pork sandwiches, chips, and veggies
  • Pot roast, potato pancakes, and veggies
  • Breaded oven roasted chicken tenders, mac and cheese, veggies
  • Homemade hamburger helper and veggies
  • You are on your own meals (2 times)

 

We had snow on Sunday morning and are expected more tonight into tomorrow.  I’ve been sick with a weird bug so I didn’t really go outside to take photos.  The one photo is taken from my back door and the other is taken from my kitchen window.

This year has been weird since we haven’t gotten much snow.  Sunday’s snow was the second measurable snow of winter.  The first was in December.  That snow measured a few tenths of an inch.  We got 1.2 inches of snow on Sunday.  The worse problem with this snowfall was the wind.  It was 50 degrees on Saturday and the temperature quickly decreased by 40 plus degrees.

Tonight/ Tomorrow’s snow’s going to give us issues also because of the wind.  It’s suppose to be extremely windy.IMG_0658.JPGIMG_0616.JPG

This is the last week of school before our two week break.  The students are restless.  The teachers are restless.  It’s been exhausting trying to keep the students focused on their work.

Menu Plan Monday – Week of December 7, 2015

For the first few days of December, we’ve had fog.  Some days it was a little bit of fog like on Wednesday where it was only within a mile of the school where I teach.  On Friday night/ Saturday morning and Saturday night/ Sunday morning, we had frozen fog.  I went out and took some photos of the frozen fog.  One of the pictures is a new favorite of mine.  I love cardinals.  To get a great picture of a mama cardinal is cool.

Menu Plan Monday – Week of November 30, 2015

I’m back at work after a week off.  So it’s back to the daily grind.

On Saturday, I asked the boys what they wanted to have for dinner.  The Imaginative One asked for brown sugar ham and the Wee One asked for chicken noodle soup.  Actually he asked for chicken nugget soup.  At least that was the joke on Saturday.  The Wee One loves chicken noodle soup.

Menu Planning Monday – Week of November 23

Menu Plan Monday

Hello!  Happy Thanksgiving week!

Last week, I didn’t make a menu so our eating was kind of crazy.  Actually it was crazy part of the week.  This week I’m going to have a plan since it’s Thanksgiving week.  I need to simplify my life this week.

My Menu

Monday – Leftovers from Saturday’s and Sunday’s meals – either chili or cheeseburger pie – If you don’t want either of those, then you can make yourself a sandwich.

Tuesday and Wednesday – One day we are going to have pumpkin chili and the other day we are going to have pulled pork sandwiches from the freezer.  We have new bbq sauce from Jungle Jim’s that Hubby wants to try.

Thursday – Thanksgiving Dinner (Link with menu and printables)

Friday – Leftovers

Prep for this week:

Monday – peel and cut potatoes, soak potatoes in water, peel and cut up carrots, hard boil the eggs in the oven, pull out the Cool-Whip from freezer

Tuesday – peel eggs & put in red beet/vinegar mixture, drain potatoes and cook in the slow cooker, make mashed potatoes, make the pumpkin pie sheet cake, make the makes it own crust apple pie, & white salad

Wednesday – Make Honey Glazed Carrots, Macaroni and Cheese, and Stuffing, Cut up veggies for veggie tray, Make Mini Monkey Bread for breakfast and Young’s Dairy Pumpkin Muffins, pull out rolls, cranberry relish, and pumpkin butter out of the freezer

Thursday – Make green bean casserole and sweet potato casserole, Bake the rolls, Whip the whipping cream, put together the relish and veggie tray, ENJOY the dinner

Menu Plan Monday – September 28

This week I am going to use the crock pot for our dinners. I have been busy with work and have been staying later then usual. The result is we haven’t been eating homemade meals.

On Saturday morning, the Wee One and I went shopping.  We got all the meat and other ingredients for the meals.

After we got home from shopping, I put the hamburger in the crock pot. While we were having family time, the hamburger was cooking. The cooked hamburger is going to be used for sloppy Joes and the soup. Then I put the stewing meat into smaller containers since I bought a family pack.

Onto the meal plan:

Monday – roasted chicken in the crock pot, baked potatoes, veggie

Tuesday – sloppy Joes, chips, salad

Wednesday – Italian beef and pasta soup, crescent roll, salad

Thursday – out to eat, the Wee One, Hubby, and I are going to a concert

Friday – beef stew with Easy Peasy Cheesy Garlic bread made from leftover hamburger buns

Saturday – Potluck dinner
