Lemon Garlic Marinade (Gluten Free, Dairy Free, Paleo, Whole30)

When I went grocery shopping last Sunday, I got some boneless pork ribs.  I almost bought a bottle of lemon garlic marinade for the ribs but decided not to get it.

I decided to make my own lemon garlic marinade for the ribs instead of buying that bottle.

When I served dinner last night, Hubby was delighted with the ribs.  Since there were a couple left over, he claimed them as his own for our left over night.  So I think this marinade is a winner.

This marinade would be good on pork chops, boneless pork ribs, pork roast, or even chicken breast.

Bonus:  It’s Whole30 friendly.

Oh, and I finally figured out how to make my recipes printer friendly.  That’s been a big problem during the 7 years I’ve had this blog.

Lemon Garlic Marinade

  • Difficulty: easy
  • Print

Ingredients

-1 lemon, zest and juiced

-1 clove of garlic, minced or 1 Tbsp. minced garlic

-2 Tbsp. extra virgin olive oil

-1 tsp. Salt

-1 tsp. Pepper

-2 tsp. oregano

Directions

  1. In a gallon sized ziploc bag, add the ingredients. Close the bag. Knead the bag until the ingredients are combined.
  2. Add either boneless ribs, pork chops, or chicken breast.
  3. Allow meat to marinade for 4 to 12 hours or freeze for up to 3 months.
  4. Preheat the oven to 425 degrees. Place meat in a baking dish.
  5. Cook the pork or chicken for 20 to 30 minutes.
  6. Once cooked, remove from the oven and allow to rest for 10 minutes before serving.
  7. Serve and enjoy!

The pork should be cooked to an internal temperature of 145 degrees and chicken should be cooked to an internal temperature of 165 degrees.

I’ve made this dish twice.  The first time, we ate it but didn’t quite enjoy it.  After we had it the second time, the Wee One thanked me for cooking it.  The next day, he ran out to my car after I pulled up in the driveway after work.  He wanted to eat the left overs for dinner that night.

Cashew Chicken (Day 22)y

Welcome to Day 22 of 31 Days of Slow Cooking.

Your pets least likable character trait.

It’s thundering outside.  The rain is pouring.  Suddenly lightning lit up the sky.

No one’s home but the dog.  He needs comfort from the scary storm outside.  So what does he do?

Does he run and hide in the bedrooms of the family members?

No, he decides to run through the doggy door into the backyard where it’s wet, loud, and dark and then bright when lightning lights up the sky.

He goes to his secret hole in the fence that no one can find.to patch up.

Then he runs to grandma’s house.

Either he finds a little hole in the fence and runs into her backyard to her doggy dog.  He escapes the bad storm.

Or he stands at the side door whimpering until someone lets him.

Meanwhile, his owners get a call from grandma telling them their dog is at her house.

This is one of our dog’s least likable traits.  We can’t believe that he doesn’t run and hide during thunderstorms.  Instead, he will run over to my mother-in-law’s house.

When we leave for the day, we must check the weather before leaving.  If the weather calls for rain, the doggy door will be shut, so he doesn’t run to grandma’s house.

It’s early in the morning.  People are trying to sleep.  All of a sudden you start to hear squawking coming from the living room. Or you hear “Nich-o-las,” “”Get off the Computer,” and “Beak Bump.”

You can not sleep because the bird is insistent someone comes and pays attention to him.

Then there is the mess all around the stand.  He thinks imaginary birds are sitting on the ground.  So he throws food at those imaginary birds.

This is my son’s bird’s least likable trait.  He likes people to pay attention to him.  If they don’t, he will start squawking or talking up a storm until someone notices him.

Cranberry Chicken (Day 20)

Welcome to Day 20 of 31 Days of Slow Cooking!

I decided to Google a writing prompt for today because I was coming up blank on what I should write.  I found a website called Massive Sway that had writing prompts for each day in October.  So I’m using today’s writing prompt.

What do you like to do on a dark and stormy day?

Last night as soon as the Wee One had soon left for his acrobatic lesson with his grandma, the dog decided he was going to jump on me.  He was breathing on me and shaking like crazy.  Why was he doing that?  It was getting ready to storm.

I was working on progress reports at that time so I finished working on them.  Then I took a bath and just relaxed.

The rest of the night was stormy.  It made for good sleeping weather.  However I kept getting interrupted by the dog walking into my room, jumping onto my bed (something he’s not suppose to do), walking around my head, and then jumping off the bed.  He did that a few times before finally settling down for the night.

It continued raining throughout today while the temperature was dropping.  I wish I wasn’t at work because it would be a good day to just relax, read a book, and cook some cookies or brownies.  On a rainy day, it’s nice to make soup in the slow cooker.

In fact, I had made taco soup last night.  We had more of the soup for dinner tonight.

What do you like to do on a dark and stormy day?

Cranberry Chicken

Stars of the Recipe:

  • 2 lbs. Chicken breasts
  • 1 sm. Onion, diced
  • 1 (14 oz.) can of cranberry whole berry sauce
  • 2 cloves of garlic minced
  • 2 Tbsp. honey
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. extra virgin olive oil
  • Pepper to taste

Steps:

  1. Place chicken in slow cooker.
  2. In a medium bowl, mix together cranberry sauce, garlic, honey, balsamic vinegar, extra virgin olive oil, and pepper.
  3. Pour over the chicken.
  4. Cook on low for 4 to 6 hours.

Chicken Corn Soup (Day 8)

Today we decided to make it a family day.  Unfortunately the Wee One refused to wake up so he stayed home with grandma instead of having fun with us.

We did half of the Donut Trail in a county to the south of us.  While we were on the Donut Trail, we did some other things.

Chicken Ranch Tacos (Day 7)

As you know I’ve been talking about whatever pops into my brain these last few days.  Today is a plea to God.

Dear God,

I know Hurricane Matthew is a given to hit the United States.  I’m just anxious about my friends and family that might be affected by this historic storm.  I’m anxious about the devastation to the area.  Orlando is my “home” and it might be hit.  Charleston, SC is another “home” of mine and it is supposed to be hit.  Please protect those cities and all of the other cities.  Please place your healing hand over the southeast coast.  Please protect over the residents.

Ranch Chicken Tacos

The Wee One loves tacos.  Beef tacos, ground beef tacos, and chicken tacos.  It does not matter.  He loves tacos.

This is another way to change up the taco game.

Ranch Chicken Tacos   

Stars of the Recipe:

  • 2 lbs. Chicken tenderloins
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1 packet of taco seasoning or 2 Tbsp. homemade taco seasoning
  • 1 packet dry Ranch dressing or 3 Tbsp. dry Ranch dressing
  • ¼ c. water

Steps:

  1. Place the chicken tenderloins in the slow cooker.  
  2. In a medium bowl, mix together the remainder of the ingredients.
  3. Pour over the chicken tenderloins.
  4. Cook on low for 6 to 8 hours.
  5. Shred.
  6. Serve on a soft tortilla shell or hard taco shell with your favorite taco toppings.

Fruity Chicken Salad

I’ve had this recipe in my files but haven’t shared it with you.  If you make the crockpot chicken or buy a rotisserie chicken, you can use the leftover chicken to make this delicious chicken salad.

When I made this chicken salad, I shared some with my mother-in-law.  She also loved this chicken salad.  She especially loved the addition of the dried cherries.

It’s good on a bun or eaten with crackers.  It would also be good just to eat with a fork.

Stars of the recipe:

  • 1 pound or 2 c. cooked chicken chopped or shredded
  • 1 c. chopped celery
  • 1 c. red grapes, halved or quartered depending on the size of the grapes
  • 1/2 c. dried cherries or cranberries
  • 1/2 c. chopped pecan pieces
  • 1 c. mayo (I use an olive oil-based mayo.)
  • salt and pepper, to taste

Steps:

  1. Add all the ingredients to a large bowl.
  2. Mix to combine.
  3. Enjoy with crackers or on a bun!.
